Julie,I'm crazy about Champagne, it's my very favourite drink. I could have it every day, and would if I could aofrfd to do so. I love what Madame Lily Bollinger wrote about Champagne many years ago: I drink it when I am happy and when I am sad. It's a simple cocktail that puts the focus on it's ingredients, and for that reason you should always use the best available ingredients to make it. Try a Champagne Cocktail made with real Champagne sometime. The dry, acidic and chalky complexity of real Champagne (it's grapes are grown in soil that consists of a large amounts of chalk) balances against the slowly dissolving sugar cube and the aromatic bitterness of the bitters, making for a decedent and luxurious (though expensive) cocktail.
